Good Eats (and a Read) to Celebrate Mexican Independence Day

We Americans love a good Cinco De Mayo celebration but, as it turns out, today is Mexican Independence Day. In honor of the holiday, when Mexicans all over the world celebrate their country’s independence from Spain, I’ve rounded up my favorite easy, family-friendly Mexican recipes.

But don’t start cooking just yet! Mexican Independence Day gives you good reason to get your hands on Hola Jalapeno, a delightful little book that’s part of Amy Wilson Sanger’s World Snack series. This fun read about Mexican food is sure to get the kiddos interested in learning more about Mexican cuisine and culture.

So, go ahead. Cook, eat, read and say salud to our neighbors down south. Their warmth, gorgeous and varied culture, beautiful country, and, of course, delectable regional cuisines are an honor to celebrate.
