Friends! It’s been too long since I’ve been here. (Two months and one week, but who’s keeping track?!) After such a long absence, I feel it’s only right to come bearing gifts. And what better gift to a parent than the ultimate snack recipe?
There are too many to list all of the reasons why I love these Cheddar Crackers. Here are just a few that I hope will convince you to give them a try:
* they are easy to make
* all children — okay, all children I’ve ever met — like them, even ones who say they don’t like cheese
* they are pretty (just look!)
* they work just as well in a lunchbox as they do at a grown-up cocktail party
* they are wholesome
* they are totally, utterly delicious
These homemade crackers are the kind of treat that I make to share with friends who I haven’t seen in too long. The kind of treat we’d share along with some veggies and dip (and maybe a glass of wine) while we madly caught up on all that’s happened in the two months (and one week) that we haven’t talked. The kind of treat we’d put out for the kids, too, so that they’d be occupied long enough to allow for our much-needed chat.
The kind of treat that I very much want to share with you… and your family.

Homemade Cheddar Crackers
1/2 cup butter
1/2 lb sharp cheddar cheese, grated (the more sharp, the better)
1 1/2 cup flour
1/2 tsp salt
1. Preheat oven to 350 degrees.
2. Cream together butter and cheese.
3. Mix flour and salt. Then add flour mixture into cheese and butter mixture. Mix well.
4. Roll dough into 1 inch balls and place on ungreased cookie sheet. Flatten and prick top with a fork.
5. Bake for 12-15 minutes.
Note: These are a great finger food for toddlers. And, on another note, if you want to get fancy, try adding some chopped chives into the batter. Yum!
