Crock Pot Chicken Fajitas: Easy Weekday Meal

Chicken fajitas have always been a family favorite in our house, but sometimes, I just do not have the time or energy to cook everything up in a skillet, especially on a busy weeknight when work and after school schedules tend to make family dinners feel nearly impossible. And then I discovered that I can just pop everything into my crock pot! This recipe is easy, healthy and delicious – plus, it lends itself to lots of variations and substitutions, which is always a bonus in my book. Enjoy!

Crock Pot Chicken Fajitas

Ingredients
1 1/2 – 2 lbs chicken thighs
2-3 red, yellow and green sweet peppers, cored and sliced
1 onion, sliced
2 cloves garlic, chopped
1/2 tsp coriander
1/2 tsp cumin
1 tsp chili powder
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp cayenne pepper (optional)
avocado, diced
salsa
shredded cheese
black beans
sour cream
cilantro
flour tortillas, warmed

Directions
Plug in your crock pot and put a thin layer of half the peppers and half the onion and garlic on the bottom of the pot. Then lay half the chicken evenly on top of the veggies. Season the chicken with half the spices, then layer the rest of the veggies on top, then repeat with the chicken and spices. Set the crock pot to 8 hours on low or 4 hours on high. When you’re ready to serve, use two forks to shred the chicken, then serve with tortillas, avocados, salsa, black beans, sour cream, cilantro and whatever accoutrements speak to your family’s taste buds. Let the kids assemble their fajitas themselves for extra special fun,
