Hi everyone! As promised, we have more great summer recipes here for you all. This particular watermelon-heavy, tomatillo salad is sweet, tart, and has a crisp, cleansing taste. Talk about a bright, feel-good meal! The water content is also high, which hydrates us on these uber hot summer days.
This recipe serves 4 people, but feel free to adjust as you see fit for your family, desires, or event:
3 cups watermelon (about 1 pound), chopped to the size you love
8 strawberries, chopped
1 heaping cup tomatillos (about 4-5 small tomatillos), chopped
1 large shallot, finely chopped
12 mint leaves, shredded
2 tbsp extra virgin olive oil
1½ tbsp balsamic vinegar
½ tsp ground black pepper
salt to taste
You can also add some lemon, seeds, nuts, or a certain crumbled/grated cheese if you’d like. This recipe is a base that can be taken into many directions.
Mixing Instructions for Watermelon Tomatillo Salad
- Put watermelon, strawberries, tomatillo and shallots in a bowl and gently toss.
- Drizzle olive oil and balsamic vinegar and gently toss once more.
- Sprinkle black pepper and top with mint.
- Season with a pinch of salt, and serve immediately.
