Whoa, that’s a loaded title. Whole Wheat, Chocolate Chip, Zucchini, Bread. What’s not to like???
Ingredients
- 1 1/2 cups whole wheat flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon salt
- 1 large egg
- 1/2 cup maple syrup
- 1/2 cup olive oil
- 1 teaspoon vanilla
- 1 1/2 cup grated zucchini, squeeze dry with a paper towel
- 1/2 cup dark chocolate

Preheat oven to 350 degrees Fahrenheit and grease a 9×5 inch loaf pan with cooking spray. If desired, you can also line the pan with parchment paper for easy removal.

Whisk together the dry ingredients (flour, baking powder, baking soda, cinnamon, nutmeg, and salt) in a medium-size bowl. Set aside.

In another medium-sized bowl, beat together the egg, maple syrup, olive oil, and vanilla.

Pour the wet ingredients into the dry and mix until combined.

Fold in the grated zucchini and chocolate chips.

Pour batter into prepared loaf pan. Sprinkle a few chocolate chips on the top

Bake at 350 degrees for 50-55 minutes, or until a toothpick inserted into center of the loaf comes out clean.
