I love this recipe because it’s just so easy. Often overwhelmed with two small kids, I treasure simplicity and recipes that are actually enjoyable. Preheat your oven to 400 degrees. Then, grease an 8-inch springform pan. If you want to have a taller cake with layers, I recommend doubling this recipe. If not, one cake with the recipe below is super great too, and for a child’s birthday party can feed quite a few kids happily (and adults). These are the simple and easy ingredients that you will need:
1 cup of all-purpose flour
2 eggs (at room temperature)
1.5 teaspoons of baking powder
1 teaspoon of vanilla extract
1 cup of butter, softened
1/2 cup of milk (room temperature)
1 cup of confectioners’ sugar
Mix the flour and baking powder into a medium bowl and set aside.
Beat the butter and sugar in your electric mixer until light and fluffy. The mixture should be noticeably lighter in color. Add room-temperature eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Beat in the vanilla, and pour the flour mixture alternately with the milk, mixing until just incorporated. Pour the batter into the prepared pan.
Bake in the preheated oven until a toothpick inserted in the center comes out clean, for about 20 minutes. Cool the cake in the pan for ten minutes, then turn the cake out onto a wire rack to cool completely.
For icing, you can do whatever you like! Some people don’t ice these cakes- they prefer a confectioner’s dusting. For a good mash mixture for the middle of the cake, you can try to mash bananas, kiwi, and a little OJ together (about 1-2 bananas 2 kiwis, and 1-2 tablespoons of OJ seems about right). Or, you can use jam or jelly. For a nice icing recipe, whip 1-2 cups of heavy cream (thick enough to hold the whip upside down) and then spread the cream over the whole cake and cover the cream with berries.
